Sometimes you just happen to find a package of mascarpone in your fridge that will expire soon. And sometimes, you just don’t want to make tiramisu, because, yes, not wanting to eat tiramisu is a thing that exists. True story. Anyways, this is when you go on the internet to find a good new recipe to try, you find one – oh, there’s even chocolate involved? Well, hello there, let’s be friends, you good looking bundt cake.
Making this cake isn’t hard – basically, all you have to do is mix everything, which is great, as the best cake is an easy cake, especially for those who have to make it. However, there’s an incredible amount of each ingredient involved in this affair, even though the recipe you’ll see here already has a reduced amount of most things. I’m not complaining, really; this cake managed to live for three entire days, which, in out household is a miracle. This doesn’t usually happen. In fact, I don’t think it ever happened before. Now that’s something.
So yeah, it’s simple, it’s big, it’s big in flavors, too, so this mascarpone bundt cake is definitely a winner. Let’s see what the fuss is all about.
What you’ll need:
- ⅔ cup soft butter (170g)
- 1 cup + 2 tbsp granulated sugar (230g)
- 2 eggs
- about 1 cup of mascarpone (250g)
- about 1 cup of sour cream (250g)
- 1tsp vanilla extract
- ½ cup cocoa powder
- 1¾ cup flour
- 1½ tsp baking soda
- 1tsp salt
- 1/3 cup dark chocolate chips

How:
- With a mixer, beat together butter and sugar in a big bowl until creamy.
- Add eggs and vanilla, then keep mixing until it’s fluffy
- Add mascarpone and sour cream and mix well.
- Again, add baking soda, flour, cocoa, salt, and mix until it’s nice and creamy.
- Add chocolate chips, mix, and try to resist the temptation to eat it all up. This step is the hardest.
- Butter and flour a bundt pan, then spoon in the mixture, and bake in a preheated oven for about 1 hour, or until a toothpick/machete inserted in the middle of the cake comes out nice and clean.
- Let it cool a little, then take it out the pan, and now you can enjoy it.

You can dust some powdered sugar on it and maybe add some nice cherry jam when you serve it, but, to be honest, there’re already plenty of things in this cake, it can stand on its own. But of course, this doesn’t mean you shouldn’t do so…
