Simple Granola

A few years ago I made a batch of granola for the first time and I haven’t tried it again since then but I really don’t know why, as it was sort of a hit. It’s perfect for breakfast, or to simply snack on during the day. And since walnuts and hazelnuts are in harvest season, I decided to quickly make a batch again – and I feel like it won’t last long.

There are tons of granola recipes around the various corners of the internet, I made this one to suit my taste, but that doesn’t mean you can play around with it – be my guest! For example, as I’m not a fan of dried fruits, I don’t put any in it, but if you like them, you can throw a handful (or more) in the finished granola. The nuts are the same – feel free to use any kind you like, just make sure they aren’t already roasted. If they are, only put them in after baking.

And how to eat granola? With a large spoon. Just kidding (not entirely). I think the best way to have it is to mix it with some plain yogurt and some fresh fruits – and then grab that large spoon by all means.

You won’t need a lot to make this in terms of tools: just a large bowl, a cup, a baking sheet, parchment paper, and a teaspoon. Simple, isn’t it? Oh, yeah, an oven might be necessary, too. Another thing to keep in mind is to make sure the nuts you are using are edibly-sized – I realized my hazelnuts are way too big right before pouring in the honey and making it all a stick mess. It wasn’t such a big problem, but I heroically searched for almost all pieces and halved them to make the granola easier to munch on.

What you’ll need:

  • 3 cups oats
  • ½ cup walnuts
  • ½ cup hazelnut
  • ¼ cup sesame seeds
  • ¼ teaspoon ginger
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¾ teaspoon salt
  • ½ cup honey
  • ¼ cup olive oil
  • ¼ cup melted coconut oil

How:

  1. Measure and mix oats, nuts, sesame seeds, spices, and salt in a bowl.
  2. Pour in milk and oils.
  3. Stir, until it’s evenly distributed.
  4.  Spread out the mix on a baking sheet lined with parchment paper, then put in the preheated oven and bake for about 20 minutes – then take it out, give it a stir, and put it back for another 10 minutes. Don’t forget that your oven might not be the same as mine, so check it earlier to make sure it won’t burn.
  5. After about 30 minutes, when everything has nicely browned (but before it gets burnt), and has a nice smell, take it out and let it cool entirely.
  6. Spoon the granola into an airtight container.

This is it – a very simple granola recipe. The result is a nice, crunchy, lightly salty breakfast with an interesting flavor. As I said, feel free to experiment with it, for example, you can use pumpkin and sunflower seeds as well, or throw some chocolate chips in after it cooled down.
